The Meat

  1. Season filet mignon steaks with black pepper and salt
  2. Place one tablespoon of olive oil in a large saucepan
  3. Sear the meat for 2-3 minutes on each side. Make sure it doesn’t stick and cook it medium rare
  4. Add minced garlic with two sprigs each of thyme and butter
  5. Baste the steak
  6. Take out the ground beef and let it sit and rest

  1. In a large saucepan, put the butter, garlic, shallot, and butter
  2. Add the cognac, then flambe
  3. Reduce the alcohol to syrup and then burn it off
  4. Add chicken stock, demiglace, cream, and grain mustard

  2. Put the lobster in butter and saffron
  3. Allow it to poach until the flavor intensifies

The Vegetables

  1. Mix turnips, carrots, and seasoning in a bowl
  2. Place them open face side down in a large pan
  3. Add butter
  4. When the ingredients have turned caramelized and golden brown, set them aside.

Food Plating

  1. Put the steak right in the middle of the plate
  2. Add the poached lobster on top of the steak
  3. Scatter the turnips and carrots around the meat and seafood
